New York’s Carbone is opening at Atlantis The Royal

The celebrity-favourite dining destination replaces Resonance by Heston Blumenthal at the luxury resort.

Dubai is home to some of the world’s most celebrated restaurants from LPM Restaurant & Bar to Zuma — and the city is about to welcome another culinary gem. Food lovers in Dubai won’t have long to wait for the arrival of the New York City restaurant, Carbone.

Carbone is set to open its doors in Dubai at Atlantis The Royal in early 2025. The celebrity favourite will take over the space formally occupied by Resonance by Heston Blumenthal on the ground floor of the beachfront hotel.

While the specific menu for Carbone Dubai hasn’t been revealed, fans can definitely look forward to indulging in Carbone’s signature Spicy Rigatoni. Other favourites such as Chicken Scarpariello, Linguini Vongole, and Veal Parmesan are also expected to grace the menu along with more of the Italian-American cuisine that has made Carbone so famous.

Carbone Dubai will be the ninth outpost to open — following launches in Dallas, Doha, Hong Kong, Las Vegas, Miami, Riyadh, and two spots in New York City. It’s also opening in London in 2025, bringing the total count to 10.

The first Carbone opened in Greenwich Village in New York. Founded by Mario Carbone, Rich Torrisi, and Jeff Zalaznick, the restaurant is celebrated for its luxurious, jazzy dining experience, with chandeliers and royal blue walls with hints of gold. The concept pays tribute to the mid-20th century Italian-American restaurants that were once all the rage in New York.

Over the years, Carbone has attracted a star-studded clientele, including Adele, Barack Obama, Jennifer Lopez, Kanye West, the Kardashians, and Travis Scott. Given its upcoming location at Atlantis The Royal, the Dubai outpost of Carbone is poised to become a hotspot for A-list diners as well.
